His mother is given as Susan LEVY at marriage and Matilda SLAUENWHITE at death. In my experience, the people one often sees as parents on a 19th Century NS marriage return slip are those who were the parents of the bride/groom at the time of the marriage, especially where a parent dies when a child is young and the surviving spouse fairly quickly remarries. On the other hand, in my experience, a NS death return is more likely to contain the name(s) of the biological parent(s), if known, in such a situation. So I tend to believe that Albert is probably the son of Matilda, as stated on his death certificate.
